Pineapple Casserole

Ingredients

2 20 oz. cans pineapple chunks in juice, drained (reserve 1/3/cup juice)

1/3 cup sugar

5 Tbsp. flour

1 cup shredded Cheddar cheese

1/4 cup butter, melted

1 sleeve Ritz crackers, crushed

Directions

Preheat oven to 350 degrees. In a medium-size bowl, combine sugar, flour, and reserved pineapple juice. Add pineapple chunks and toss well to combine. Spoon pineapple mixture into a greased 8x8 inch casserole dish, and top with shredded cheese.

Combine crushed Ritz cracker crumbs and melted butter. Spread Ritz cracker topping evenly on top of pineapple mixture.

Bake uncovered at 350 degrees for 30 minutes, or until bubbly.

Mimi’s Oatmeal Cookies

1 cup shortening or butter 1 ½  cups flour 

1 cup brown sugar 1 tsp salt

1 cup white sugar  1 tsp baking soda

2 large eggs  3 cups oatmeal

1 tsp vanilla  1 cup chopped nuts

Cream shortening and sugars. Add eggs and vanilla. Beat well. Add sifted dry ingredients, oat and nuts. Stir well. Shape into rolls, chill well, and then slice into ½ “ slices. Bake on greased cookie sheets for 10 minutes at 350 degrees until golden. Warning: They will spread on the cookie sheet. So give them some room.
